October 2011 — "Charcut has gained quite a lot of attention in the last year and while a good amount of that was gained through its head-chef being a competitor on Top Chef Canada, I've quickly learned that's not the only thing this restaurant has going for it.
Came here with family last week and was immediately digging the bustling environment the restaurant has. Conversations throughout the place were lively, which dropped any pre-conceived notions that I was in for a night of polite whispering.
We ordered a plethora of items ranging from the butcher-block full of in-house cured meats and roasted beets to the steak of the day and braised pork belly with polenta. Everything was fantastic, although if I were to go back I'd be happy with nothing but an order of poutine and the butchers block, which were both incredible.
Our server was awesome, making sure we were informed of the nights specials and updating us on the progress of our dinner items and whatnot.
I can't stress how welcoming it was coming to a great restaurant and not being disappointed one way or another. Try Charcut out."

August 2011 — "We had decided to host a small birthday party at Charcut and I was estactic to try the menu. Following Connie's success through Canada's Top chef, I had high expectations for her food. I had ordered the famous duck fat poutine to start, a house special parmesean truffled pasta (they were out of my first entree choice) and for dessert, I had the creme brulee to share. I was extremely pleased with all my choices and this seemed to be the general consensus with the entire table.
The service was definitely worth noting as well, our server was very attentative and pleasent. We even had the manager drop in to make sure we were happy with our meals.
The pricing was more than proportionate to the value we had gotten. I will most definitely be returning to try their lunch menus as well as the famous bone marrow. Overall, Highly recommended!

November 2010 — "Made a reservation through open table a week in advance for four, in the additional information to provide, I listed that it was my husband's 50th birthday. Parking for this restaurant is complicated during peak time. They say on their website that there is parking available, what they don't say is that the parking will cost you as it is through the hotel. The parking area for the hotel is underground, which is good, but in order to get to the restaurant you have to go from the parking garage out of the building, across the lane way and thru the hotel lobby. We arrived and were seated immediately, we were five minutes late due to the parking issue, but were greeted friendly and not put out. The restaurant is a little on the loud side, as it is a fairly open concept where you can see into the kitchen and food prep area. I was surprised to see that no one in the kitchen was wearing a hairnet or hat, that is just an observation. Once seated we were offered water (sparkling or regular without ice) at about the 15 minute mark. Fifteen minutes or so after the water our server came back and asked if we wanted anything else to drink, which we ordered a wine, beer and two mocktails. Forty-four minutes after being seated we received our drinks, quite surprised at the length of time as there seemed to be quite a few staff on hand. Server came back and took our food order at the forty-five to fifty minute mark. Appy's came out in a timely fashion, however the lag time between the drink order, appy's and food were on the unacceptable side. After dinner finished plates remained on our table for quite some time, which is not very appealing if you are thinking of dessert. My biggest pet peeve when going to a restaurant is a server either asking me to hand them a plate to clear the table or reaching across me without communicating what they are doing. Example is food arrives behind you and they reach across the left side of you to place across the table or beside you to the other person. As a customer you have no idea what is happening and the risk of food landing on you or you being startled is high. It doesn't take much knowledge for the server to advise the customer that they are on their left and do they mind if they reach over. For others this may not be an issue. Food was moderately priced, overall food quality was good, but not memorable. There was no mention at anytime about my husband's birthday and we did not bring it up. Dessert was offered after plates had sat for too long on the table and we kind of lost our appetite for it. Our dinner experience was two and a half hours long, in that period of time we were offered refills on our alcoholic beverages once and water was offered twice. One of the Chef/owners did come out from behind the kitchen area and made rounds to talk to customers for feed back. However the question asked was "how was the food" which the response was fine. The question should have been "was this a good experience", "would you recommend us to your friends or clients" and "would you come back" as our response to these questions would have been "no". Sadly, I was pretty excited to bring my husband here as we have eaten all over the world, but the service quality suffered so much and the food was not remarkable enough to want to come back."
