April 2010 — "This is a great bakery and cafe. I go here on a regular basis for fresh bread, sandwiches, coffee and treats -- all of which are top notch. In particular I like the veggie sandwiches and chocolate brownies. You won't be disappointed -- well done Cascadia!"

May 2009 — "Stumbling around in Victoria's design district, I decided to satisfy my rumbling tummy with a stop at Cascadia. I had only learned afterward of its esteemed reputuation as being the offspring of Rebar. It's a regular coffee shop atmosphere for Victoira with exposed brick walls. What makes this place stand out from the rest it its exquisite selection of artisnal baked goods. There's a rack of breads behind the counter. I opted to bring home a loaf of wholewheat sourdough, which I have never seen sold anywhere else. The crust was chewy, the bread wholesome. I also treated myself to a butter tart to eat in store. The crust was obviously formed by hand and was charminlgly mishapen. It tasted rich and decadent and I enjoyed every bite. I also had a regular coffee, which was self-serve out of pump thermoses. It was really very average coffee. I would recommended splurging and getting an espresso based drink if you must have caffeine. They had a variety of delicious looking baked goods. I will be back for a piece of square-shaped of pie."

Located on Government St., Cascadia is the product of Rebar's Audrey Alsterberg. It's a funky little eatery that seems right at home in the historic section of downtown. They specialize in wholefood bakeing, proving that dessert can be healthy.
