September 2010 — "as you come in to the restaurant there is a courteous server to seat you. as you sit and read the menu you think, its quite steeply priced. after you order it takes a while for the food to arrive then it comes and the food is so fantastic that i almost died, and you realise this is dirt cheap for quality, my steak was crisp and juicy it was a delicious and fantastic meal in general, the scenery is beautiful, the selection is grand with many choices for anyone with allergies or is vegetarian, overall i give it a solid eleven out of ten"

September 2009 — "We looked over the menues for several restaraunts and decided on the Chophouse because they had what looked to be a nice vegetarian option for my wife. We'd previously eaten in the cafe adjacent the restaraunt and found the desserts there to be great.
Our waiter was pleasant, but not too interested in impressing us. We got the feeling he was near the end of a trying shift or his mind was elsewhere---in any case he was missing beats. Other waiters in the place were doing a far superior job with their tables and so it was obvious to us what was missing in usual service here. Other tables got bread and butter baskets---we waited and then had to ask to get ours. Other tables were offered water---we had to ask to get some. Other tables were offered desert, we had to ask to see the desert menue.
As for the meal---the bread (once finally delivered) was nice and warm; fresh and very tasty. The wine was good and a nice full pour. the salads were on the small side, but the greens were fresh and the dressings tasty.
My wife's risotto was under cooked. Risotto shouldn't be al-dente, and this was beyond that---actually crunchy. Good flavor, but that good flavor was destroyed by being underdone.
My steak was cooked as ordered and was lean and flavorful. In Alberta, I'd have sent it back had it been otherwise and at $35.
We didn't order dessert afterall, but felt confident that, based on past experience, it would have been good to great.
I think the service here is probably better than we experienced on this visit and hopefully the undercooked risotto an unfortunate mistake. We are going to make our ratings based on those assumptions. We expect high-end prices in Waterton; location plays a bigger-than-average role in prices here---but customers shouldn't feel like they paid more than average for less than average food/experience. "

"WORST EXPERIENCE EVER!"John
August 2007 — "We visited this place last August after along drive from Banff, we wanted to eat in the dinning room. We were told that this was a four star establishment. Upon entering we were overtaken by the sent of something molding. We were seated by our host, the tables were not set in a four star fashion. As we were looking threw the menu, I noticed that a lot of the items on the menu were not four star. While reading the menu, I overheard the next table complain about the salmon being overcooked and dry. Finally our waiter arrived to take our order, he smelled like he had just been smoking. I ordered the chicken and my wife ordered the steak medium rare. While we were waiting for our aunt re the table next to us, that had sent back the salmon received their new salmon. Moments later the table was calling the waiter back. By the look on the gentleman's face he seemed revolted, there was a large fly buzzing under his salmon, and he complained loudly that he was not paying for this! The table got up and left. Our food arrived, it took about twenty five minutes. I noticed that the vegetables were the frozen in the bag type and the potatoes were over mashed, my chicken had this pink sauce or glaze coated over it with no garnish. Upon cutting into my chicken, I noticed that it was under cooked and my wife's steak had been overdone. My wife was not happy and called the waiter over, and our food was sent back. We waited again for another ten minutes until the chicken and the steak returned. My chicken was overcooked and my wife's steak was finally done correctly. As we were eating I noticed that there were a large number of flies flying around the dining room, it seemed that every time the kitchen door flew open, more flies would come into the dining room. I didn't finish my chicken and I didn't want to complain again, I was tired and I wanted to relax after a long trip. The waiter returned to take our plates, as he was clearing he noticed that I had not finished my chicken. The waiter asked, how was your chicken! I told him I was not happy with the food and the time it took to serve. The waiter asked If I wanted the dessert menu, my wife said yes! I ordered the moose and my wife had the cake, desert was fine and seemed to be the only part of the meal that wasn't bungled, next to being bread and watered at the stat of the meal. We asked for the bill, as we were waiting for our bill, I looked around the dinning room to see what others were eating. I noticed that the meals were only two to three course's, and the food was processed! The bill; our deserts were free due to the returns and waiting, we paid the bill and then left.
This establishment is not four star let alone two stars, and a bad attempt at using processed food to look like four star aunt re's .

I wouldn't recommend this establishments dining room while staying in Waterton, there are far better restaurants across the street!
